Banana and mango quinoa porridge

Banana and Crushed Pineapple Loaf90 minutes

Ingredients

1 1⁄2 cups of rice bran oil

3 cups plain flour

1 cup of brown sugar

1 tsp baking powder

1 tsp baking soda

½ cup of shredded coconut

1 ½ cups undrained crushed Dole pineapple

3 x eggs 1 cup of mashed ripe bananas

2 teaspoons vanilla extract

1 cup chopped almonds

 

Method 

Combine flour, brown sugar, baking powder and baking soda. Then beat eggs and add crushed pineapple, oil, vanilla extract, and mashed bananas.

Add to dry ingredients and combine with chopped almonds and spread in two greased loaf trays.

Bake at 175°C for 60 minutes or until a toothpick inserted in center comes out clean.

Cool 15 minutes in pan then remove to rack to cool completely.
