Banana Avocado Chocolate Mousse

Protein Balls

Ingredients

2 cups walnuts, halves, and pieces

½ cup sunflower seeds

1 cup coconut, shredded

½ cup of dark chocolate chips

2 Tbsp of rolled oats

¾ cup of quality peanut butter (Pics, Ceres and Fix and Fogg are great brands)

2Tb of honey

 

Method

Combine the walnuts, sunflower seeds, pumpkin seeds, rolled oats and coconut in the bowl of a food processor. Pulse until the ingredients are combined.

Add peanut butter and honey to the bowl and process until the mixture forms a dough. Add the dark chocolate chips and mix well.

Form the dough into medium sized balls by rolling a portion between your palms. Place the finished balls on a tray lined with waxed paper or in a container and chill for at least 30 minutes before serving.

 

*Best kept in the fridge.

Combine with a piece of fresh fruit as a snack!
